The desire to combine food and health emerges clearly from both the dishes prepared by his father Aurelio, who opened the restaurant in 1970, and those of his son Gigi. Aurelio Diaz has always been aware of the importance of nature as a source of health remedies. "Although he cooked in the classic Italian tradition, he always put in some typical herb from up here," Mr. Dariz says of his father. After attending Academy Etoile in Venice and working in renowned restaurants in Italy such as I Carracci in Bologna and for a while in England, Mr. Dariz Jr. returned home to the province of Belluno. It was then that he decided to follow his own path. Today the restaurant has a dual nature: a great base for hiking in the Dolomites and a gourmet's paradise. Gigi curates his dishes and tasting menus with a view to experimentation as continuous improvement, while respecting the nature of the product and the valuable teachings of his father Aurelio.
Great character, talented and humble at the same time: today we meet Riccardo Gaspari, class of 1985, chef and owner of the SanBrite restaurant in Cortina d'Ampezzo. Born in San Candido and growing up surrounded by nature, the air at home is pure, crisp, there he cultivates his passion: skiing, which will lead him to compete in the European Cup in the fast disciplines. From a very young age he has been helping his family in the farm he owns: a structure taken over in 2004 and refurbished, El Brite de Larieto. Coming back from an important experience in Osteria Francescana together with Massimo Bottura, it was in 2017 that he opened SanBrite, of which he has the reins together with his wife Ludovica. In 2021 he also received the important recognition of Michelin Star. His cuisine is regenerative (as he likes to call it), authentic, sustainable, made of great attention and love for the raw material.

Restaurant Aurelio will take you on a discovery of the unique flavors of the mountains. Chef Luigi personally harvests the edible wild herbs and alpine flowers that Giau's high-altitude grasslands offer and then prepares, constitutes and uses them in the kitchen by combining ancient knowledge and new techniques.
For you a welcome drink followed by a gourmet course. For those who wish, there will then be an opportunity to stay for dinner as well.

Foraging is an activity during which people collect plants, herbs and wild fruits that have a consequent use in cooking. It is an activity that allows people to get in touch with the natural habitat. Guests will be accompanied by chef Riccardo Gaspari on a discovery of local herbs, collecting them and understanding their different possible uses in the kitchen.
Together with the chef, they will reach Pian Federa, a vantage point nestled in one of Europe's largest larch groves where they will experience the BriteMobile, our traveling kitchen. Here, guests will try a tasting menu specially designed by chef Riccardo Gaspari to which a selection of wines by the glass will be paired.

The Piccolo Brite Dairy is the place of the heart of our farm: a gem among the Ampezzo Dolomites where every day the cheesemaker processes the milk of our cows, expertly raised by Flavio in our alpine pasture at 1800m. The entire supply chain is strictly controlled: from the birth of the calves, to the sale of the products in our cheese boutique, adjacent to the dairy.
Guests will have the opportunity to meet our cheesemaker and with him discover the history of our dairy, visiting its premises and cellar. Together, they will then try their hand at making their own cheese, from the curd to making their own wheel.
Following the dairy experience, guests will eat at our farmhouse El Brite de Larieto, where they will taste a specially designed menu themed "Dairy." From the quotation below, no wines are included.
